Jablonski's Vegan Tyrolean Dumplings

Ingredients for 4 portions

  20 g     Oil

130 g     Onions, finely diced

  30 g     Chives, finely diced

100 g     Vegan ham (e.g. from Vegini)

250 g     Bread cubes

300 ml    Soy milk

  40 g     Flour, smooth

½ tsp      Nutmeg, grated

1 pinch   Salt and pepper

1 ½ l      Vegetable broth

 

  1. Weigh and cut all ingredients.

  2. Place the bread cubes in a bowl.

  3. Heat the oil in the pan and lightly fry the onions for 2 to 3 minutes.

  4. Then add the vegan bacon and sauté for another 3 to 4 minutes. Afterwards turn off the heat.

  5. Now add soy milk, salt, pepper and nutmeg to the pan.

  6. Then pour the warm mixture onto the bread cubes.

  7. Add flour and chives.

  8. Mix everything well until a dough is formed. Let it rest for 10 minutes.

  9. Bring the vegetable broth to the boil and form dumplings.

  10. Simmer the dumplings in the vegetable broth for about 15 minutes.

  11. Finally, remove the dumplings with a wooden spoon and serve them with caramelized sauerkraut or directly in the broth.
